For about the last year and a half I have been on a high protein diet that requires I eat breakfast every day. For many, breakfast is believed to be the most important meal of the day because it jump starts your metabolism. Since I don’t eat eggs, getting protein in for breakfast is a challenge.
Recently, I came across a recipe that made a fairly high protein muffin without added sugar and very little flour. I changed up the recipe a bit to fit more to my taste and ended up really loving these muffins. The best part is I could freeze them and microwave as needed.
First, I mixed together some peanut butter, melted butter, eggs, maple syrup (the real stuff), vanilla and milk. You can use a healthy no sugar added peanut butter if you wish.
I then added the dry ingredients of flour, baking soda, cinnamon and salt. Sorry, didn’t get a picture.
I then stirred in some oatmeal.
And chocolate chips. These are dark chocolate chips which add a wonderful hint of sweetness. Yummy! I should note the original recipe mentions other possible add ins like dried fruit, coconut, or nuts. I kept this batch simple but will definitely try other add ins next time.
Next, scoop into your paper lined cupcake pan. I sprinkled some Super Seed mix to the top of each for added protein. It also adds a wonderful crunch. I found this ingredient online so if interested, click here.
I also added sprinkles just to make them pretty and maybe to entice my husband or boys into trying one.
These muffins were so yummy! I love the hint of sweetness from the chocolate chips. The maple syrup is subtle and goes so well with the peanut butter. By my calculations, these muffins have 7 grams of protein each. Great way to start your day!
Power Muffins
Ingredients
- 1/2 cup butter melted
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 2 eggs
- 1 cup milk
- 2 tsp vanilla
- 1 cup flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups oatmeal
- 1 cup chocolate chips
- Super Seed Mix for sprinkling
- Sprinkles for topping
Instructions

Preheat over to 400.

In a large bowl, mix together melted butter, peanut butter, maple syrup, milk, eggs and vanilla till smooth.

Add flour, baking powder, cinnamon and salt. Mix until combined.

Stir in oatmeal and chocolate chips.

Scoop into muffin tin lined with paper liners. Sprinkle each muffin with Super Seed mix and sprinkles. Bake 20 minutes.
