Chocolate Caramel Pretzel Bites

Recently I had a hankering for something sweet. As you know, I hate grocery shopping, so I had no choice but to make something up with what I had in the baking basket in my pantry. I had some chocolate chips and caramel bits and thought surely there is something I can make with this. Well, the pretzels in the snack basket caught my attention and these Chocolate Caramel Pretzel bites were born!

I melted the chocolate chips in the microwave. Just do literally a minute and stir before adding a few more seconds so it is completely melted. You don’t want to burn the chocolate. You could also melt over a double boiler.

Using an offset spatula, I spread most of the chocolate over a parchment lined sheet pan. Reserve about 1/3 of the chocolate for topping. (Sheet pan size is 13×18.)

Next, sprinkle the pretzel twists over the chocolate. I had about two layers of pretzels. I used about half of the bag.

Then, melt the caramel bits with about two tablespoons water and stir until smooth. Again, this will take a couple turns in the microwave about 30 seconds at a time. Be sure to stir and stir till smooth! Pour it as evenly as you can over the pretzels.

Using the reserved chocolate, drizzle it over the caramel. Place in freezer for about 15 minutes until it hardens. Then cut or break into squares!

Chocolate Caramel Pretzel Bites

Ingredients

  • 8 oz pretzels twists
  • 2 12 oz bags chocolate chips (semi sweet or milk or combo)
  • 1 11 oz bag caramel bits

Instructions

  1. In microwaveable bowl, melt the chocolate chips until smooth. Stir about every 30 seconds.

  2. Pour about 2/3 of the chocolate over a parchment lined sheet pan and smooth out with an offset spatula until about 1/8 in thick. Set aside the remaining chocolate.

  3. Add the pretzels. I used about a half of a 15 oz bag of pretzels. Press into chocolate.

  4. Melt the caramel bits with 2 tablespoons water in the microwave and stir until smooth. May take several turns in microwave 30 seconds at a time. Stir and stir till water incorporates into caramel and becomes smooth.

  5. Pour caramel over pretzels evenly.

  6. Drizzle the top of the caramel/pretzels with the reserved melted chocolate.

  7. Freeze for about 15 minutes. Then cut into squares or break into pieces.
