Caprese Salad

My hubby and I love Caprese Salad and there are so many ways to serve it.  This one is a quick and easy version, just throw it all in a bowl!  Sometimes I halve the tomatoes (if I feel like going through the extra trouble).  And sometimes I serve it on a crostini to make bruschetta for an appetizer.  Try it any way you like it!

Caprese Salad

Fresh summer salad recipe with several adaptations.

Ingredients

  • 1 pint grape tomatoes sliced or left whole
  • 1 8 oz container fresh mozzarella pearls
  • 4 tbsp fresh basil chopped
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • kosher salt and freshly ground pepper to taste

Instructions

  1. Combine tomatoes, mozzarella, 

  2. basil, oil, balsamic vinegar, salt and pepper to a bowl. Stir to combine
  3. **For brushcetta, make crostini by browning slices of baguette brushed with olive oil and seasoned with salt and freshly ground pepper.
