Season Ahead Chicken Breast

Today, I am sharing a helpful get ahead dinner idea. I do this a lot especially this time of year when you can throw stuff on the grill in a hurry!

Recently, my favorite local grocer had chicken cutlets on sale. Basically, they take a thick boneless chicken breast and slice it on their meat slicer into about 1/4 inch cutlets. The family size packages had like 4-6 cutlets in each package. I love chicken and couldn’t pass this sale up! Obviously, this is too much chicken for a two person meal so I repackaged Gary in two cutlet portions. However, I thought to get ahead, let me preseason them.

So in a couple bags, I did grilling seasonings, use your favorite steak seasoning or make your own. In others, I added balsamic, honey, grainy mustard, thyme, red pepper flakes, salt, pepper, etc. and squeezed the bag to incorporate the seasonings, then added the chicken and again squeezed the bag around the chicken so it all got evenly covered in the seasnings. The last few I seasoned for fajitas using lime juice and zest as well as other seasonings like cumin, paprika, oregano, cayenne, salt, pepper, and some olive oil. Then I stored in the freezer for quick thaw dinner ideas. (Lay bags flat with the cutlets side by side to freeze. This helps for quicker thawing later.)

Just take out the night before and place in the refrigerator. These cutlets make great Sheet Pan meals too. I just love having these quick and easy bags ready to bake off or grill. Just add vegetables and you are ready for a healthy dinner!
