Peach Cobbler with Balsamic Drizzle

Warm peach cobbler on a cold winter night just hits the spot. Years ago, while in California wine country, we did a balsamic vinegar and olive oil tasting which was wonderful. We were told to try balsamic on desserts like ice cream and peach cobbler. At the time, we thought that was weird. However, it truly does take this dessert to the next level.

To start, melt some butter in a small baking dish.

While the butter is melting, combine your dry ingredients. Just some sugar, flour and baking powder.

Next whisk in some milk to make a batter.

Pour the batter over the melted butter.

No need to mix it in, just leave it like that. Drain a can of peaches (or you can use slices of fresh peaches.)

Arrange the peaches over the top of the batter/butter.

Sprinkle the top with a little sugar and cinnamon. Then bake for a really long time!

Drizzle some aged balsamic vinegar over the top. Here’s the thing, I use 20 year aged balsamic because the longer a balsamic is aged, the sweeter and thicker it becomes. It’s more concentrated because the water is absorbed in the barrel during the aging process leaving a more pure form of the balsamic vinegar. If you don’t have aged vinegar, just make a balsamic reduction by placing about a 1/2 cup balsamic vinegar in a saucepan and allow it to reduce on low until it’s of a syrup consistency. Trust me on this, it’s so worth the extra effort!

Peach Cobbler

Buttery, crusty, warm and yummy!  Balsamic drizzle takes this to a new level.

Ingredients

  • 1/2 cup butter
  • 1 cup flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 3/4 cup milk
  • 1 can peaches (large or small can)*
  • 1/4 cup sugar for sprinkling
  • 2 tbsp cinnamon
  • aged balsamic vinegar or reduction (optional)

Instructions

  1. Preheat oven to 350.  In a small baking dish (8×8 or 9×9 inch), melt the butter in the over (or microwave if dish is microwave safe).

  2. While butter is melting, combine the flour, 1 cup of sugar and baking powder.  Add the milk and whisk to a batter.

  3. Gently pour batter over the melted butter.  Do not mix.

  4. Drain peaches* and arrange on top of the batter/butter.  Sprinkle with 1/4 cup sugar and cinnamon.

  5. Bake for 50 minutes.  Drizzle with balsamic vinegar or reduction.

    To make reduction, add 1/2 cup of balsamic vinegar to a saucepan over low heat and allow to reduce by half so it becomes a syrup consistency.

Recipe Notes

*You can use a small or large can of peaches depending on how many peaches you want in relation to the cobbler.

**You can use fresh peaches (about four sliced). If using fresh peaches, pour 1/2 cup water over the peaches prior to sprinkling with cinnamon and sugar. (Sounds strange but it works!)

This recipe works with fresh or frozen strawberries and blueberries as well.
