Balsamic Glazed Mahi Mahi with Green Beans

January is the month of eating healthy even if for just a week or two! Today’s blog is a very quick and healthy meal for two. My protein of choice is chicken but fish/seafood runs a close second and that is only because the hubby is not a huge fish/seafood guy. He prefers beef but since I do the cooking…

To start, blanch some fresh green beans in boiling hot water for a few minutes then remove beans to a plate and pour out the water and dry out that saucepan. It’s all about less cookware, less cleanup.


While that is happening, make your seasoning for the fish using ground mustard, salt and pepper or your seasonings of choice. I sometimes use steak seasoning. It’s like my concession to the beef lover in the house. Ha!

At this point, start heating a grill pan if you have one. Otherwise, just a nonstick or cast iron skillet will work.

Generously oil the grill pan or add a couple tablespoons of olive oil to your skillet and immediately add the fish. For the record, you could use other types of fish like salmon, halibut, swordfish, etc. Just be sure it’s a “sturdy” fish that will allow for grilling.

While the fish is grilling, make a glaze of honey and balsamic vinegar. (I heated the honey in the microwave for a few seconds so it mixed better with the balsamic.)

The fish will only need to cook maybe five minutes per side.

Then, just glaze the cooked side with the balsamic/honey glaze using a brush.

Remember that green bean saucepan? Well, I added some olive oil to the pan and sauteed some grated garlic for just a minute. Then I added the green beans, salt and pepper. (Sorry, I don’t have a picture of the green beans in the pan.)

Since I like both sides glazed, I turn one more time to glaze the second side. Pour the remaining glaze over the green beans in the saucepan and heat through. (Since you only brushed the cooked side of the fish, no need to worry about using it over the green beans.) However, if you brushed the raw fish, just cook for a few minutes if worried about cross contamination.

Balsamic Glazed Mahi Mahi with Green Beans

Ingredients

  • 2 fillets mahi mahi
  • 1/2 lb fresh green beans
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/3 cup honey
  • 1/4 cup aged balsamic vinegar
  • 2 cloves garlic grated
  • 3 tbsp olive oil divided

Instructions

  1. Blanch the green beans in a saucepan of boiling water for about 5 minutes.  Remove the green beans to a plate.  Drain and dry saucepan for reuse.

  2. Heat a separate grill pan or skillet on high heat.  On a small plate, mix the ground mustard, salt and pepper.  Pat the fish dry with paper towels and then season both sides of the fish with the mixture.  Once skillet is heated, add 2 tablespoons olive oil to coat pan.  Immediately add the fish and grill for five minutes on first side.

  3. In the emptied (and dry) saucepan that you used to blanch the green beans, add 1 tablespoon oil and the garlic.  Saute for about a minute.  Then return the green beans to the saucepan, cover and simmer while fish continues to cook. 

  4. In another small bowl, add the honey and microwave for about 20 seconds.  Once heated, mix in the balsamic vinegar.  (The two mix easier once the honey is heated.)

  5. Turn the fish and brush the cooked side of fish with the balsamic glaze.  Cook second side of fish for about 4 minutes.  Then flip again to glaze second side.  Remove to plate.

  6. Once fish is glazed on both sides, add remaining glaze to the green beans and allow to heat through.  (Since brushing glaze on the cooked side of fish, no need to worry about cross contamination.)
