Chewy Fudge Brownies

Recently, I made a dessert tray for an event which included two family favorites.  One is my chewy brownie recipe which is truly easy and trust me if you like chewy brownies, you will love these!  (The other recipe are peanut butter chocolate Buckeyes which I will blog soon!  I promise!)

For the brownies, I use whatever box of brownie mix is on sale at the local grocery store.  I think this day I used Pillsbury Chocolate Fudge.  You didn’t expect that did you??  This is top secret stuff here!  Just make sure you buy a box mix that makes a 13×9 pan.  And yes, the 99 cent box works fine!  Truly, do not bother getting the more expensive brownie mix, just don’t tell my friends I use a mix and a cheap one at that!  (One of these days, I will blog my homemade brownie recipe.)  Next, be sure to pick up a bag of Heath toffee bits while you are on the baking aisle.

For the brownies, follow the directions on the box and then, mix in the bag of toffee bits.  Toffee is the secret to the chewy.  You can not taste the toffee in the brownies, it just adds the chewy ooey yumminess.  I am all about the chewy brownie!  For this platter, I reserved a few of the bits for sprinkling on top.  However, when I make a batch for the family, I just use the whole bag.  This day, I was all about making everything pretty, so I reserved a couple tablespoons.

I used parchment paper to line the pan so I could easily remove them but you don’t have to do this if just making brownies.  Be sure to spray pan and parchment with cooking spray.

Once baked, allow them to sit for a few minutes before using the parchment paper to remove them from the pan.  Be sure to cool completely before cutting.  For my brownie bites, I cut off the side edges which are quite yummy and allowed the hubby to enjoy them.  My boys would have devoured those brownie bones had they been around!  Next, I cut the brownies very small about 1 inch by 1 inch to make small brownie bites.  If making brownies for the family, cut to regular size  Again, I only did this extra step for platter presentation.

For the dessert platter, I elevated these brownies by placing them on a rack over a sheet pan and drizzled Chocolate Ganache over top of each brownie until it was completely covered.  (Click on link for my ganache recipe.)  As I mentioned in that blog, I keep ganache in my freezer and use it as I need it.  This day I microwaved a little for a pourable consistency.

Remember those couple tablespoons of reserved toffee bits?  Well, I put them in a resealable bag and smashed them into even smaller bits using the flat edge of a meat tenderizer or a rolling pin.  Then I sprinkled a little on top of each brownie bite.  I refrigerated these until I was ready to assemble the dessert platter.

Ingredients

  • 1 box brownie mix (Pillsbury Chocolate Fudge)
  • 2/3 cup oil
  • 1/4 cup water
  • 2 eggs
  • 1 bag Toffee bits

Instructions

  1. Preheat oven per box directions.  Mix brownies according to package directions.  Mix in bag of toffee bits.  Bake in a 13x9 greased pan.  Bake about 30-35 minutes.  Cool completely before cutting.

  1. And those brownies were delicious! I liked that they were small so if you are watching what you eat, one brownie isn’t bad.
