Peanut Butter Clusters

Life has been crazy! I hope everyone is doing well in this time of CoVid 19. It has been a while since my last post but all is well and I assure you I am baking and cooking a great deal! Today, I want to share a family favorite, Peanut Butter Clusters. These are a quick and easy dessert/snack that your family will love. Trust me on this! Only four ingredients and it is an easy to remember recipe!

While most moms made Rice Krispie Treats, this mom made Peanut Butter Clusters. My kids were shocked the first time I made homemade Rice Krispie Treats only knowing them as the prepackaged snack from the store. (To clarify, it wasn’t my actual first time to make them, just the first time they remembered me making them. Anyone growing up in the 80’s has that recipe tattooed to your brain!)

So try these Peanut Butter Clusters, you will LOVE them!

To start, combine sugar and corn syrup to a medium saucepan over medium heat. (Be sure to have a cup of peanut butter and cereal measured and ready to go!) This process moves quickly!

Bring the sugar and syrup just to a rolling boil. As soon as it becomes a rolling boil, remove from heat. (If you cook too long, the clusters when cooled become quite hard so be sure not to overcook.)

Add peanut butter to the hot mixture and stir until it melts in and becomes smooth (unless using chunky peanut butter.)

Add the Special K, corn flakes or rice cereal. I use Special K.

Once the cereal is completely coated, using a cookie scoop, make clusters on a parchment/wax paper/silicone pad covered sheet pan or counter. Or alternatively, you can press the mixture into a greased 13×9 pan and cut as you would Rice Krispie Treats.

Allow these to cool. Or not! They crisp up as they cool so if you sample one too soon, you may find the cereal seems soggy. It’s not, just allow to cool!

Ingredients

  • 1 cup sugar
  • 1 cup corn syrup
  • 1 cup peanut butter smooth or crunchy
  • 6 cups Special K or corn flakes or rice cereal

Instructions

  1. **Gather your ingredients first because process moves quickly.

    ***Grease a 13×9 pan or cover a sheet pan with parchment/wax paper/silicone pad.

  2. In a medium saucepan over medium heat, stir together sugar and syrup until combined. Bring to a rolling boil. Immediately, remove from heat.

  3. Stir in peanut butter until smooth. Stir in cereal until coated.

  4. Using a cookie scoop, make clusters on a parchment/wax paper/silicone pad covered sheet pan or cookie sheet. Cool.

    Alternately, you can press mixture into a greased 13×9 pan as you would Rice Krispie Treats. Cut when cooled.
